The Canton product page is headed Your Canton Validator, Operated by Everstake, and says Everstake operates production Canton validators.

Canton-scoped versus platform-wide counts. About and Press pages state $7B+ staked value secured, 130+ networks, 99.98% observed infrastructure uptime, and $700M+ rewards generated. Those are Everstake's platform-wide figures and are not scoped to Canton here.
